THIS chocolate mud cake cannot be any easier. Seriously. Well actually, I take that back... It can, replace the saucepan steps with microwave intervals as I do, and it is even easier.
What you need:
1 1/2 cups hot water
200g dark cooking chocolate
1/4 cup cocoa powder
2 cups caster sugar
2 eggs lightly beaten
2 tsp vanilla essence
1 1/2 cups self-raising flour
In a saucepan over low heat (this can be the microwave part that I spoke about) melt together butter, cocoa, chocolate, sugar, vanilla and hot water. (I zap for 30 seconds, stir, zap, stir, zap, continue until melted).
Then add flour and eggs and mix well.
The mixture will be very runny. Pour into a greased 30cm cake tin and bake at 150C for one hour and 15 minutes.
Allow to cool for five minutes before turning out.
When cool, sprinkle with icing sugar or ganache as I have done. (Combine 1/3 cup of cream and one packet of choc chips in microwave container, stirring and melting in 30 second intervals until melted, cool and then spread) but make sure the cake is completely cooled before icing.
