My Smoko Break: The day-before cheesecake

YOU can't get a much easier cheesecake to make for a dessert.

You will need:

1 1/4 cups sweet biscuit crumbs (about 12), I always use arrowroots

80g butter, melted

500g block cream cheese

400g can condensed milk

3 teaspoons gelatine, dissolved in 1/4 cup boiling water

1/3 cup lemon juice

2 tablespoons grated lemon rind

Method:

Crush biscuit crumbs and butter, combine and press into the base of a pan; chill.

Using an electric mixer, beat cheese until smooth.

Beat in condensed milk and gelatine mixture until smooth, then add lemon juice and rind and beat until combined.

Pour mixture into prepared base and refrigerate overnight. That's it!

I always add a bit of yellow food colouring to the top.
