MY NO nonsense frittata.
It's kind of like quiche, but it's not.
Kind of like potato bake, but it's not.
And kind of like scrambled eggs, but it's not.
Frittata. A different and nice side dish or lunch meal served with salad.
You can add anything to it that needs using up, but here's what I did.
Slice four regular size potatoes and place enough to cover the bottom of an oven-proof dish. In another bowl, combine a carton of cream (I use 200ml UHT cream), eight eggs, one cup of grated cheese, a handful of frozen beans, about two cups of chopped up bacon, two chopped tomatoes, one onion and a packet of French onion soup. Stir well.
Pour enough over the potatoes to cover and then add another layer of potatoes and continue the process until each are used up.
Bake in a 180-degree oven for about an hour, watching it - you will know.
And you will get very hungry while it's cooking because the smell is divine!
