YOU haven't tried banana muffins till you try these. Absolutely by far the best and easiest you will ever bake and eat. Your mouth will melt, and you won't stop at one. You can also add a packet of white or chocolate chips if you are feeling particularly naughty.
We like them just the way they are. This recipe makes 28. And they freeze.
What you will need:
3 cups of self-raising flour
1 teaspoon of salt
6 bananas, mashed
1 1/2 cups of sugar (I always use raw sugar for everything so I use this but white sugar would be fine
180g butter, melted
The crumble topping:
2/3 cup of brown sugar
4 tablespoons plain flour
A teaspoon of cinnamon
Make the banana muffins by combining the bananas, sugar, egg and melted butter in a large bowl. Add the flour and salt, and mix until just combined. Spoon the batter into greased muffin tins.
In a small bowl, mix the brown sugar, flour and cinnamon. Add in the butter and mix together. Rub between your fingertips until it forms crumbs. Put on top of muffin mixture in cups, and then place into the oven.
Bake for half an hour, until cooked through, in a moderate 180-degree oven.
